A taste of El Ranchito on ol' Molokai
So, I made this once following a Pinterest recipe, and it was good, but not great. I changed the recipe based on taste and my husband's comments to make it more like the Midwestern classic that we're used to. Here's what I came up with:
Ammended Recipe:
1 1/4 Cups American Cheese
1/4 Cup Monterey Jack Cheese
2/3 to 1 cup milk
7-8 Jalepeno slices
1 green chili from a can (optional)
1 tsp cumin
1 tsp garlic salt
Chop cheese into tiny bites, add 2/3 Cup milk.
Microwave in 30 second intervals until mostly melted.
Add more milk if necessary.
Add VERY FINELY diced jalepenos (7-8 was a good spice level for us, but you can make it hotter or milder)
Add VERY FINELY diced green chilis
Add cumin and garlic salt
Stir thoroughly
Microwave for a couple more 30 second intervals.
Serve immediately, but just pop it in the microwave for 30 more seconds if you need to reheat.
