I saw this recipe in the latest issue of Coastal Living and had to try it! We all love fruits in this house and fruit based desserts. This is a great way to beat the summer heat. It's cool, refreshing and super cheap and easy to make. I can't wait to make it again when we actually have limes from our own tree.
As usual, we didn't quite have all of the ingredients, so I modified it a little.
Here's the recipe I used:
Easy Strawberry Sorbet
1 bag frozen strawberries
Juice from 2 kafir limes (because that's what we had in the fridge)
extra bottled lime juice to make up 1/2 Cup
2 Cups water
1 tsp salt (to make it more Braddah Pop like)
1 1/2 C sugar- totally could cut this down...
Dump everything in the blender and let it sit on the counter to get a little soft. Blend until smooth. Pour into a 9x13 pan (not metal) Place in the freezer, and stir with a fork every 30-40 minutes to keep it nice and fluffy. Keep doing this for 3-5 hours until it is the set consistency of sorbet. serve immediately, or cover tightly and I stored ours for about 2 weeks because it made a lot for our little family. (Probably like a 1/2 gallon?)
