Pumpkin Crunch


Pumpkin Crunch is a pretty popular dessert here in Hawaii. It's the prefect blend of warm pumpkin spice mixed with cool whipped topping and toasted walnuts. It's easy to make, and great for pot luck.

Recipe:
1 large can pumpkin
1 can evaporated milk
1 cup sugar
3 eggs
1 tsp cinnamon
1/2 tsp vanilla
dash nutmeg
dash cloves

1 yellow cake mix
2 cups chopped walnuts
1 cup melted butter

1 tub Cool Whip

Grease a 9x13 pan and line it with waxed paper. Spray with cooking spray.
Mix first 8 ingredients together. Pour into pan. Evenly sprinkle dry cake mix on top. Gently pat. Evenly sprinkle chopped walnuts on top. Pat again. Drizzle melted butter on top. Bake at 350 for 45-55 minutes. Allow to cool completely then invert onto a different pan and top with cool whip. Enjoy!
