This has become my favorite blueberry muffin recipe! We have also substituted frozen berries of all kinds in liu of the fresh blueberries when we don’t have any. It’s also a great way to use up a carton of fresh berries that you forgot was in the fridge. They’re also super easy and take all of 40 min start to finish.
Recipe:
1 cup sugar
1/2 cup butter- very soft
2 eggs
1tsp vanilla
1/2 tsp sat
2 tsp baking powder
1/2 cup milk
2 cups flour
Preheat oven to 375:
Mix all ingredients together.
After well combined, stir in one package (~1 cup) fresh blueberries. You can sub in whatever you want, if you use frozen berries dry them off first and stir very gently or they will smush.
Butter and flour a muffin tin.
Distribute batter into 12 muffin cups. They’ll be pretty full-it’s fine. Tap pan to make the tops nice and even.
Sprinkle a fine sprinkling of regular sugar on top (~1/4 tsp each)
Bake 28-30 min at 375F.
