Copy Cat 'Chevy's Fresh Mex' Sweet Corn Tamalito

 First of all Chevy's Fresh Mex is a chain restaurant only found in a few random, but specific locations across the United States. They serve their dishes with a side of sweet corn mush called tamalito. I'm pretty sure its not a real food, but whatever. 

Tamalitos are a real food, but they're like tamales, this is like a pudding-ish mush. It may be an acquired taste, but I love it and this recipe tastes pretty similar to the restaurant.




Recipe

1/4 Cup masa

1/3 Cup Sugar

5 T butter

1 can corn (divided)

--------------

1/2 Cup cornmeal

1 teaspoon baking powder

1/2 teaspoon salt

3 Tablespoons milk



1. Mix first three ingredients until fluffy

2. Pour 1/2 cup of the juice from the corn and put it in the blender. Pour half the corn kernels in the blender with the liquid and blend.

3. Drain away any remaining liquid from the rest of the can of corn.

4. Add the corn kernels, blender contents, and final4 ingredients to the mixer and combine. 

5. Pour mixture into a 8-9 inch baking dish 

6. Here's the absolutely ridiculous part. Find a pot that your dish can sit on top of, fill it with water. Cover your baking dish with plastic wrap and use the pot to steam it like a double boiler. I did an hour of steam and it wasn't enough, so after that, I baked it for 10 min at 350. Next time i will just try a water bath in the over like a normal person.
