Zia's Pasta Carbonara

We happened to have all the right ingredients for Pasta Carbonara in the house, which NEVER happens. So I had to capitalize on the situation.

The original recipe is from Zia's. I made it a few years back, but when I went to their website they had new recipes up, which is great, because now I want to try them all!!!

I found a copy of the recipe here:
http://www.stltoday.com/lifestyles/food-and-cooking/recipes/recipe-details/?rid=851&sorig=qs

But because I cook for a whole family, I basically doubled it, like so:
  • 1 box pasta
  • 1/2 cup butter
  • 2 teaspoon garlic paste
  • 1/8 teaspoon red pepper flakes
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup sliced fresh mushrooms
  • 1 pkg crumbled cooked bacon
  • 2 cup heavy whipping cream
  • 2 medium egg, beaten
  • Freshly grated Parmesan cheese
Directions
  1. Bring a large pot of salted water to a bowl. Add linguine; cook al dente according to package directions. Drain and keep warm.
  2. Meanwhile, melt butter in a large skillet. Add garlic, red pepper flakes, black pepper, mushrooms and crumbled bacon. Sauté over medium heat for 2 to 3 minutes. Add cream; bring to a full boil. Add linguine; return mixture to a full boil and cook for 2 minutes. Remove from heat. Add egg, stirring quickly to prevent egg from scrambling.
  3. Place in hot pasta bowls; top with Parmesan.

Coombs Baby Number Three: 37 Week Update

 37 Weeks

So...how's everyone doing this week?

Baby: doing good? The size of a winter melon or swiss chard. Practicing breathing and swallowing. About 6.5 pounds according to the baby app. That feels pretty accurate to me. This baby is still not as active as my other two, which may be a good thing, hopefully its not an indicator of something bad.

Dad: working on Lanai all week, with the option for Marty to fly him home at 30 minutes notice if I go into labor :) He has a crazy name picked out, so we'll see who wins in the end.

Mom: Loving my new panama hat! Haha. Other than that, feeling pretty terrible. Actually better since it's Monday. A little more energy, a little less pelvic/hip pain, overall still kinds crappy though. My masters class started today and it looks like it's going to be sooooo hard! I think I'm getting sick again...which brings us to:

Big Sister and Brother: Really excited that Auntie Anna and Nana are here!!!  Really CRAZY!! Playing baby dolls alot, and definitely getting into all the baby stuff.

Dogs, Cats, Chickens, Daily Geckos: indifferent

That's all for now. My next appointment with the midwives is on Wednesday, so we'll see how it goes! Hopefully I'm even more dialated than last week. I've been trying to do squats and eat dates and drink raspberry leaf tea. So far I don't think any of it is working. Lol. As all my hippy books say, nature is fully in charge of when labor is meant to happen.

DIY Paniolo Burgers

Paniolo is the Hawaiian word for cowboy. Typically in Hawaii a Paniolo burger is topped with some sort of BBQ sauce and onion. Usually an onion ring. Paddlers used to have a really good Paniolo Burger, but that was about 2-3 managers ago, and SURPRISE, they're currently closed and about to switch owners AGAIN. I think that will make 6 different owners in the 5 years we've been here?

Anyway. back to the Burger.

Here's the secret:
1. Make your burgers on cast iron, only season with plenty of salt and pepper
2. Top with swiss cheese and let it melt over the heat
3. Toast your sesame buns in the burger grease
4. Top with BBQ sauce, lettuce, bread and butter pickles, and onion rings

I've been making these Pioneer Woman ones a lot lately and they are so so so good!

Baby Number 3: 36.5 week update

Well, I never made time to write up a 36 week post. And now here we are at 36.5 weeks already. I passed the "no NICU" Mark. Which means even if I went into labor today (or yesterday, or 2-3 days ago) the baby should be healthy and fine and I can deliver here on Molokai.

I had my midwife appointment today.
They do the group B step swab; but results take a few days. And she checked me. I'm starting to dialate and thin and she could feel a baby head bulge!!!! Yay! Haha. So, 1-4 more weeks and this kid is going to be here! Baby's heartbeat was good at 135 BPM, and he feels like he will be smaller than Mikey. He definitely dropped this week and is getting strong! Like, to the point where once I actually yelled "ouch!" When he punched me. Haha. Not even to be dramatic, it just came out, I guess I wasn't expecting such a strong punch from such a tiny fist.

I'm up to 158 pounds, about the same as I was with Sophia. I'm feeling good about the delivery. I finished "Ina May's guide to childbirth" and I finished skimming "Childbirth without Fear". I couldn't read the whole thing. It's so old and Grantly Dick-ried is so boring!!! But I got the gist of it. Now I'm on to "Spiritual Midwifery" it's really good so far. I'm very calm and I would say better prepared for labor than ever before. My relaxin is kicking in and my pelvis really hurts! Probably from sitting too much during the day and having an awful bed and this being our third baby. I had a little bit of pelvic symphosis last time (where your bones literally pull apart-ahhhhhh!!!) and it feels like I have it again, but the midwife said there's nothing you can do, it just happens, especially as you have more and more kids and your ligaments know what's in store for them. Exercise seems to help at least ease the pain though.

The only thing that sucks is my stupid masters class starts Monday. Gahhhhhhhhhh-I'm sooooooo sick of it and can not wait to be done. Also I wish I never would have started it. My awesome job couldn't get any worse, so it's not like I'm going to be able to use it anytime soon. But, back to the subject at hand: One of my friends recently shared this on Facebook. And it could be more timely for a pregnant mamma.

So that's where my headspace is right now. Ready to peacefully deliver a healthy baby 😊and ready to take some time off and dedicate a little more of myself to all my kids. 😊
Because let's face it, my patience with Michael and Sophia lately has been pretty dang low. And while they've both been little turds lately it's probably just a cry for more attention. 😊

Just your typical Tuesday afternoon at the Coombs household

These pics are actually from last Tuesday when Danny was home. He's working on Maui all of this week. Sophia got a pirate kit from Grandma and Grandpa for her birthday, and I finally let her use it...facepaint and all. I guess they watch Jake and teh neverland Pirates at Auntie Gwen's house because Micahel keeps taking the sword and yelling "Aye Captian"Also, he HAD to have TWO eye patches. lol. One wasn't good enough.

Baby Number 3: 35 Week update Maternity Photo Shoot!!!

I'm 35 weeks today. 7 more days until full term. Which means IF I was one of those lucky people who goes into labor early, the baby could be born at any time. However, I'm generally not that lucky.

Anyway, the baby can breathe and digest things now, and is supposed to be about the size of a honeydew melon. The new midwife estimates a birth weight of 7.5-8.5 pounds. I totally agree, and so far, feel like this baby is smaller than Michael, however, you tend to gain the most weight in the last month (or I do anyway) and that's when la bebe really packs on pounds. So far, I still weigh 155 pounds, which isn't so bad. This means I've gained 27 pounds so far. With Mr Mac at 35 weeks I already weighed about 163 pounds, so I've definitely done better at keeping my weight down this time.

Last week Daniel was on Lanai all week, but right before he left, our friend Noa, who happens to be a potographer took some awesome pics for us one afternoon after work. Mine turned out great, but the kids obviously were not in the mood to be photographed (not that they ever are) Maybe we'll try a few more, or wait for our newest family member to arrive first :)
